Wellness #40: Fitness

1. Check your BMI- Mine is 27.5, overweight.
2. Calculate your calorie requirements- 1380 BMR, 920 Activity
3. Answer a questionnaire to determine your health age or life expectancy- Health age 48, Life expectancy - 83
Yes, I was surprised by the results. I expect to reduce my calorie intake and adopt safer driving practices. This was interesting!

Wellness #39: Nutrition (Part 2) Continued

According to Recipes.Sparkpeople.com, by substituting Light Cream of Mushroom Soup and Light Mayonnaise and eleminating the black olives, the calorie count per serving goes from 276.7 calories per serving to 223.3. Fat is reduced from 11.5 g to 5.4 g. Sodium is reduced from 424.9 mg to 205.5 mg. Saturated fat is reduced from1.6 g to 0.8 g. A significant bottom line change!

Wellness #39: Nutrition (Part 2)

A favorite recipe: CHICKEN SPAGHETTI
4 chicken breasts, seasoned, sauteed in olive oil and cut in small pieces
Deglaze the skillet with 1 cup water
16 oz. Linguine, cooked al dente
1 can Cream of Mushroom Soup
1 cup Hellman's mayonnaise
2 T. prepared mustard
3 T. lemon juice
1 can sliced black olives, drained

Season chicken breasts with garlic powder, cayenne pepper and
sea salt. Brown in skillet with olive oil. Cut in to bite size pieces.
Remove from pan and deglaze with one cup water and save.

Cook Linguine until until tender and drain.

Blend Cream of Mushroom Soup, mayonnaise, mustard, lemon juice and water from deglazed pan. Add chopped chicken, Linguine and black olives. Place in casserole and sprinkle with grated cheese as desired. Bake at 350 until cheese melts and casserole is slightly bubbly. Serves 10+.

Wellness #39: Nutrition

Spend some time exploring Nutrition Data and write in your blog about features you would find useful. Include something surprising that you learned about the food you have been eating...

I am surprised to learn that reheating food causes a loss of most vitamins...some by as much as 40%! I am sticking to lean meat on whole wheat bread ( with lots of leafy lettuce!) for lunch at work.

And I hate what I learned about grilling meat! We love outdoor grilling at our house and consider steak a real treat but, according to NutritionalData, grilling presents a real health risk. Two separate types of carcinogenic compounds are produced by high temperature cooking- heterocyclic amines and polycylic aromatic hydrocarbons. Maybe that is why it smells so good! Guess we just won't eat it so often...
